Soy + Citrus Glazed Salmon
You can always just have basic roasted salmon as a quick dinner for yourself or a couple, BUT…this version is better. Don’t be so bland, man! Especially if you’re cooking for company. I realize this is likely not the best picture but the flavor and taste will make up for it, I guarantee it. That is all.
Ingredients:
1 bunch scallions, both white AND green parts, chopped
2 lbs. skin-on salmon fillet
1/4 cup plus 3 additional tablespoons olive oil
Salt and black pepper
1/4 cup soy sauce (low sodium is best)
1/4 cup fresh lime juice
2 tablespoons fresh orange juice
Pinch of red pepper flakes
Preheat oven to 325 degrees. Meanwhile chop 4 scallions and place in a medium bowl, then set aside.
Place the salmon skin side down in a large baking dish and drizzle with 2 tablespoons olive oil, and season with salt and pepper. Place in the oven and roast until it turns salmon-y pink – roughly 10 to 12 minutes.
Meanwhile, heat 1 tablespoon olive oil over medium-high heat in a small pan or skillet. Add the scallions and season with salt and pepper, cooking and tossing occasionally, until deeply charred in spots – about 4 minutes.
Remove from heat and add back into medium bowl, along with the soy sauce, lime juice, orange juice, and remaining ¼ cup olive oil. Season with salt and pepper and throw in a good pinch of red pepper flakes. Swirl all around to combine and marry the flavors.
Transfer the salmon to a serving platter and pour charred scallion + soy/citrus mixture over top.
