Italian Tuscan Chicken w/ Parm Cream Sauce
This dish is full of classic Italian flavors and ingredients, combining tomato, onion, garlic, spinach and parm into a delicious cream sauce that is spooned over perfectly cooked and succulent chicken breast. While I have generally gone the route of rice on the side, pasta complements the dish equally well! Quinoa or even just some crusty bread works too.
Ingredients:
4 boneless chicken breasts
Salt and black pepper
3 tablespoons olive oil
3 cloves garlic, chopped
½ yellow onion, diced
1 tomato, diced
2 cups spinach
1 cup heavy or light cream (your call!)
½ cup grated parmesan cheese
1 tablespoon parsley flakes
Cooked pasta, rice or quinoa for serving
Season the chicken all over with salt and pepper.
Heat 2 tablespoons of the oil in a skillet or large pan over medium-low heat. Place the chicken in the skillet and cook for about 12 minutes to crisp up a bit. Move the chicken around from time to time to ensure it cooks evenly. Flip the chicken, then cook for another 12 minutes, until the chicken is cooked through. Remove from pan.
Add remaining tablespoon of oil and add in the onion, stirring until onions are translucent. Stir in the garlic + tomatoes and cook another minute.
Add in the spinach, cooking until the spinach is wilted. Add the cream, then add some more salt and pepper, bringing to a boil. Add the Parmesan cheese and parsley, stirring until the sauce has thickened slightly.
Place the chicken back in the pan, and swirl around, spooning the sauce on top of the chicken.
Serve with pasta, rice or quinoa!
