Roasted Pork Loin
So juicy, so well spiced, so delicious. Can pair well with probably anything. These are just a few of the thoughts that come to mind about this particular recipe. For whatever reason, I had never really messed with roasting a pork loin before…I definitely thought it was something much more difficult to get right and was thus intimidated by the idea for a long time.
That said, I’m so glad I tried it - turned out beautifully. I guess the moral of the story here is, even if cooking a certain dish is intimidating in your mind, give it a try! You might surprise yourself like I did. Follow this recipe and I guarantee you’ll be golden.
Ingredients:
1 pork tenderloin (about 1.5 lbs.)
1 tablespoon paprika
2 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon salt
1 teaspoon pepper
1 tablespoon olive oil
1 tablespoon apple cider vinegar
1 tablespoon unsalted butter, cut up into smaller pieces
Preheat oven to 400 degrees. Mix the paprika, garlic powder, cumin, oregano, salt and pepper all together in a bowl. Rub this spice mix all over the pork loin.
Heat the oil in a large frying pan over medium-high heat. Add the pork. Sear on all sides until it is brown, about 5 minutes total.
Move the pork to a foil covered baking dish. Pour the apple cider vinegar over the pork then dot the top with the butter. Fold foil over top of the pork to cover.
Bake the pork for 20-25 minutes. Let the pork rest for 5 minutes before slicing into rounds. Enjoy!
